Ingredients

  • 6 cups water
  • 4 cups cooked white rice

Method

  1. Soak the beans overnight in water. Drain the beans and set aside.

  3. Add the beans, bay leaves, thyme, oregano, cayenne pepper, black pepper, salt, and water to the pot. Stir to combine.
  4. Bring the mixture to a boil over high heat. Reduce the heat to low and simmer, partially covered, for 1 hour and 30 minutes, stirring occasionally.
  5. Remove the bay leaves from the pot and discard.
  6. Using a cooking spoon, slightly mash some of the beans against the side of the pot to thicken the mixture.
  7. Serve the beans and sauce over cooked white rice.

Notes

  • If you don't have time to soak the beans overnight, you can use the quick soak method. Place the beans in a pot, cover with water, and bring to a boil. Boil for 2 minutes, then remove from heat, cover, and let sit for 1 hour. Drain the beans and proceed with the recipe.
  • This dish is even better the next day, so feel free to make it ahead of time!
