- 6 cups water
- 4 cups cooked white rice

Method
- Soak the beans overnight in water. Drain the beans and set aside.
- In a large pot, heat the oil over medium-high heat. Add the onions, bell peppers, celery, and garlic. Cook for 5 minutes, stirring frequently.
- Add the beans, bay leaves, thyme, oregano, cayenne pepper, black pepper, salt, and water to the pot. Stir to combine.
- Bring the mixture to a boil over high heat. Reduce the heat to low and simmer, partially covered, for 1 hour and 30 minutes, stirring occasionally.
- Remove the bay leaves from the pot and discard.
- Using a cooking spoon, slightly mash some of the beans against the side of the pot to thicken the mixture.
- Serve the beans and sauce over cooked white rice.
Notes
- If you don't have time to soak the beans overnight, you can use the quick soak method. Place the beans in a pot, cover with water, and bring to a boil. Boil for 2 minutes, then remove from heat, cover, and let sit for 1 hour. Drain the beans and proceed with the recipe.
- This dish is even better the next day, so feel free to make it ahead of time!
