- 1 lb white fish fillets
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 ½ cups rice
- 2 ½ cups of water
- 1 can of diced tomatoes
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 2 tablespoons of olive oil
Equipment:
- Large pot or Dutch oven
- Wooden spoon
- Cutting board
- Chef’s knife
Method:
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
- Add the red and green bell peppers and sauté for an additional 2-3 minutes.
- Add the rice, diced tomatoes, paprika, cumin, salt, and pepper to the pot and stir well.
- Add the water to the pot and stir well.
- Bring the mixture to a boil and then reduce the heat to low.
- Cover the pot and simmer for 20 minutes.
- Remove the lid and place the fish fillets on top of the rice mixture.
- Cover the pot again and simmer for an additional 15-20 minutes until the fish is cooked through and the rice is tender.
- Remove the pot from the heat and let it sit for 5-10 minutes before serving.
