Ingredients

Method

  1. In a large pot, bring the chicken broth to a boil. Add the rice and stir well. Reduce the heat to low, cover and simmer for 20 minutes or until the rice is tender and the liquid has been absorbed.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
  3. Add the diced apples to the skillet and cook until they are tender, about 5-7 minutes.
  4. Add the cooked rice to the skillet and stir well to combine.
  5. Add the dried cranberries, chopped pecans, parsley, thyme, salt and pepper to the skillet and stir well to combine.
  6. Transfer the mixture to a baking dish and bake in a preheated oven at 350°F for 10-15 minutes or until the stuffing is heated through and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

This recipe can be easily modified to suit your taste preferences. You can add more or less of any ingredient depending on your preference. You can also substitute the dried cranberries with raisins or any other dried fruit of your choice.
