- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 apples, peeled, cored and diced
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper, to taste

Method
- In a large pot, bring the chicken broth to a boil. Add the rice and stir well. Reduce the heat to low, cover and simmer for 20 minutes or until the rice is tender and the liquid has been absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
- Add the diced apples to the skillet and cook until they are tender, about 5-7 minutes.
- Add the cooked rice to the skillet and stir well to combine.
- Add the dried cranberries, chopped pecans, parsley, thyme, salt and pepper to the skillet and stir well to combine.
- Transfer the mixture to a baking dish and bake in a preheated oven at 350°F for 10-15 minutes or until the stuffing is heated through and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
