  • 500g of white fish fillets
  • 1 cup of Basmati rice
  • 2 cups of water
  • 1 onion, chopped

  • 1 teaspoon of turmeric
  • 1/2 teaspoon of saffron
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley and coriander for garnish

Method

  1. In a mixing bowl, combine the lemon juice, garlic, cumin, paprika, salt, and pepper. Add the fish fillets and marinate for 20 minutes.
  2. Wash the rice and soak it in water for 15 minutes.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and fry until golden brown.
  4. Add the marinated fish fillets to the pot and fry for 2-3 minutes on each side until lightly browned. Remove the fish from the pot and set aside.
  5. Add the soaked rice to the pot and stir for 1-2 minutes until the rice is coated with the onion and spices.

  7. Once the rice is cooked, remove the pot from the heat and let it sit for 10 minutes.
  8. In a frying pan, heat some oil and fry the sliced onions until golden brown and crispy.
  9. Transfer the rice to a serving dish. Arrange the fish fillets on top of the rice and sprinkle with fresh parsley and coriander.
  10. Garnish with fried onions and serve hot.
