- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1/2 onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 tablespoon tomato paste
- 1 tablespoon tomato bouillon
- 1 3/4 cups water

Method
- Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain well.
- Heat the olive oil in a large saucepan over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic and cook for another minute.
- Add the rice and salt and stir to coat the rice in the oil and vegetables. Cook for 2-3 minutes, stirring occasionally, until the rice starts to turn golden brown.
- Add the tomato paste and tomato bouillon and stir to combine.
- Add the water and stir well. Bring to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
- Simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove from the heat and let sit, covered, for 5 minutes.
- Fluff the rice with a fork and serve.
Notes
For a more colorful dish, add some frozen peas and carrots to the rice during the last 5 minutes of cooking. You can also add some sliced jalapeƱo for a little extra heat.Nutrition Info
