Description

Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1/2 onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 tablespoon tomato paste
  • 1 tablespoon tomato bouillon
  • 1 3/4 cups water

Method

  1. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain well.
  2. Heat the olive oil in a large saucepan over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Add the rice and salt and stir to coat the rice in the oil and vegetables. Cook for 2-3 minutes, stirring occasionally, until the rice starts to turn golden brown.
  5. Add the tomato paste and tomato bouillon and stir to combine.
  6. Add the water and stir well. Bring to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
  7. Simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  8. Remove from the heat and let sit, covered, for 5 minutes.
  9. Fluff the rice with a fork and serve.

Notes

For a more colorful dish, add some frozen peas and carrots to the rice during the last 5 minutes of cooking. You can also add some sliced jalapeƱo for a little extra heat.
