Ingredients

  • 1 whole chicken, cleaned and washed

  • 2 cups of uncooked rice
  • 4 cups of chicken broth
  • 3 cloves of garlic, minced

  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1 bunch of coriander, chopped
  • 1 red chili, sliced

Method

  1. Preheat the oven to 180°C.
  2. Mix salt, sugar, dark soy sauce, sesame oil, and oyster sauce in a small bowl.
  3. Brush the chicken with the mixture and place it on a baking tray.
  4. Roast the chicken for 1 hour and 15 minutes or until the skin turns golden brown.
  5. While the chicken is roasting, wash the rice and add it to the medium pot with chicken broth.
  6. Bring the rice to boil over high heat, then reduce the heat to low and let it simmer until cooked.
  7. In a pan, heat the cooking oil and sauté the minced garlic until fragrant.
  8. Add the cooked rice and stir-fry it with the garlic for 1-2 minutes.
  9. Once the chicken is done, let it rest for 10 minutes before carving it into pieces.
  10. Arrange the chicken pieces on a plate with the cucumber, tomato, coriander, and chili.
  11. Serve the chicken with the stir-fried garlic rice and your favorite dipping sauces.

Notes

  • For a more flavorful rice, add pandan leaves and ginger to the chicken broth.
  • You can also use a rice cooker instead of a pot to cook the rice.
