  • 2 tbsp. olive oil
  • 2 tbsp. soy sauce
  • 1 tbsp. honey
  • 1 tbsp. rice vinegar
  • 1 tsp. grated ginger
  • salt and pepper to taste
  • chopped green onions for garnish

Equipment

  • Large skillet or wok
  • Wooden spoon or spatula
  • Bowl for mixing sauce
  • Cooking oil spray

Method

  1. Heat a large skillet or wok over medium-high heat and spray with cooking oil spray.
  2. Add the sliced onion and garlic, and cook for 2-3 minutes until the onion is translucent.
  3. Add the sliced bell peppers and cook for another 2-3 minutes until the peppers are slightly softened.
  4. Push the vegetables to the sides of the pan and add the shrimp to the center.
  5. Cook the shrimp for 1-2 minutes on each side until pink and cooked through.
  6. In a bowl, mix together the soy sauce, honey, rice vinegar, grated ginger, salt, and pepper.
  7. Add the cooked rice to the pan and stir to combine with the vegetables and shrimp.
  8. Pour the sauce over the rice and shrimp mixture, and stir well to coat.
  9. Cook for another 2-3 minutes until everything is heated through and the sauce has thickened slightly.
  10. Remove from heat and garnish with chopped green onions before serving.
