- 8-10 rice paper wrappers
- 1 cup of cooked rice noodles
- 1/2 cup of thinly sliced carrots
- 1/2 cup of thinly sliced cucumbers
- 1/2 cup of thinly sliced red bell peppers
- 1/2 cup of fresh cilantro leaves
- 1/2 cup of fresh mint leaves
- 1/2 cup of fresh basil leaves
- 1/4 cup of chopped roasted peanuts
- Salt and pepper to taste
Equipment
- Knife
- Cutting board
- Bowl with warm water
- Damp kitchen towel
Method
- Prepare all the vegetables and herbs by thinly slicing them and set them aside.
- Cook the rice noodles according to the instructions on the package and set them aside.
- Fill a large bowl with warm water.
- Dip one rice paper wrapper into the water for a few seconds until it softens.
- Place the rice paper wrapper on a damp kitchen towel.
- Place a small amount of rice noodles, vegetables, and herbs onto the rice paper wrapper.
- Sprinkle some roasted peanuts on top.
- Roll up the rice paper wrapper tightly, tucking in the sides as you go.
- Repeat the process with the remaining rice paper wrappers and filling ingredients.
- Serve the rice paper rolls with soy sauce or peanut dipping sauce.
