Method

  1. Prepare all the vegetables and herbs by thinly slicing them and set them aside.
  2. Cook the rice noodles according to the instructions on the package and set them aside.
  3. Fill a large bowl with warm water.
  4. Dip one rice paper wrapper into the water for a few seconds until it softens.
  5. Place the rice paper wrapper on a damp kitchen towel.

  7. Sprinkle some roasted peanuts on top.
  8. Roll up the rice paper wrapper tightly, tucking in the sides as you go.
