Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1 broccoli head, chopped into small florets
  • 2 medium-sized carrots, peeled and sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon of cornstarch
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Equipment

  • A large pot with a lid
  • A large skillet
  • A wooden spoon
  • A cutting board
  • A sharp knife
  • A measuring cup and spoons

Method

  1. Start by rinsing the rice in cold water until the water runs clear. Then, add the rice and water to a large pot and bring to a boil over high heat.
  2. Once the water is boiling, reduce the heat to low and cover the pot with a lid. Cook the rice for around 18 minutes, or until all the water has been absorbed and the rice is tender.
  3. While the rice is cooking, prepare the vegetables. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the broccoli, carrots, red bell pepper, and onion to the skillet and cook for around 5-7 minutes, or until the vegetables start to soften.
  5. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
  6. In a small bowl, whisk together the cornstarch, soy sauce, honey, and 1/4 cup of water.
  7. Pour the sauce over the vegetables in the skillet and stir until everything is coated in the sauce.
  8. Cook for an additional 2-3 minutes, or until the sauce has thickened and the vegetables are cooked to your liking. Add salt and pepper to taste.
  9. Fluff the cooked rice with a fork and divide it between four bowls.
  10. Spoon the vegetable mixture over the rice and serve immediately.
