- 1 cup brown rice
- 1 red bell pepper, sliced

- 1 cup broccoli florets
- 1 tbsp. olive oil
- 1/4 cup low-sodium soy sauce
- 2 tbsp. honey
- 1 tbsp. cornstarch
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. ground ginger
- 1/4 cup water

- Large saucepan

Method
- Cook brown rice according to package instructions and set aside.
- Preheat grill pan over medium-high heat.
- Season chicken with salt and pepper and grill for 6-8 minutes on each side or until cooked through.
- While chicken is cooking, heat olive oil in a large saucepan over medium-high heat.
- Add sliced onions, red and green bell peppers, and broccoli florets to the saucepan and sauté for 5-7 minutes or until vegetables are tender.
- While vegetables are cooking, whisk together soy sauce, honey, cornstarch, garlic powder, onion powder, ground ginger, and water in a small bowl to make the sauce.
- When vegetables are tender, add the sauce to the saucepan and stir until the vegetables are coated in the sauce.
