Method
- Wash the rice and put it in a pot with enough water to cover it. Cook the rice until it is tender and all the water has been absorbed.
- In a separate pot, bring the milk, sugar, cinnamon stick, and lemon peel to a boil.
- Remove the cinnamon stick and lemon peel from the milk mixture.
- Add the cooked rice to the milk mixture and cook over low heat, stirring occasionally, for about 30 minutes or until the rice is creamy and the mixture has thickened.
- In a bowl, whisk the egg yolks and add a ladle of the hot rice mixture. Whisk until combined.
- Add the egg mixture back to the pot and stir well.
- Cook over low heat for another 5 minutes, stirring constantly.
- Remove from heat and let it cool for a few minutes.
- Transfer the sweet rice to a serving dish and sprinkle with cinnamon powder.
- Refrigerate for at least 2 hours before serving.
