- 1 teaspoon of turmeric
- 4 cups of chicken stock
- 1/4 cup of olive oil
- Salt and pepper to taste
- A handful of fresh parsley, chopped

Method
1. Rinse the mussels in cold water and remove any beards or debris. Discard any mussels that are open or cracked. 2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and peppers and sauté until soft. 3. Add the paprika, turmeric, and rice and stir to coat the rice in the spices. 4. Add the chicken stock and bring to a boil. Reduce the heat to low, cover the pot, and let simmer for 15 minutes. 5. Add the mussels to the pot, cover, and cook for another 10-15 minutes or until the mussels have opened. 6. Discard any mussels that have not opened. 7. Season with salt and pepper to taste and sprinkle with fresh parsley. 8. Serve hot with crusty bread and a glass of white wine.Notes
