- 1 cup wild rice
- 2 cups vegetable broth
- 1 onion, chopped
- 1 red bell pepper, chopped

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 can diced tomatoes, drained
- 1 can black beans, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1 lime, cut into wedges

Method
- Rinse the wild rice in a fine mesh strainer and set aside.
- In a large pot, bring the vegetable broth to a boil. Add the wild rice and reduce the heat to low. Cover and simmer for 40-45 minutes, or until the rice is tender and the liquid has been absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the onion and red bell pepper and sauté for 5-7 minutes, or until softened.
- Add the garlic, smoked paprika, thyme, salt, and black pepper to the skillet and cook for an additional minute, stirring constantly.
- Stir in the diced tomatoes and black beans and cook for 5-7 minutes, or until heated through.
- Once the wild rice is cooked, add it to the skillet with the vegetable mixture and stir to combine.
- Remove from heat and stir in the chopped parsley.
- Serve hot with lime wedges on the side.
Notes
