Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 can diced tomatoes, drained
  • 1 can black beans, drained and rinsed
  • 1/4 cup chopped fresh parsley
  • 1 lime, cut into wedges

Equipment

  • Large pot with lid
  • Large skillet
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Method

  1. Rinse the wild rice in a fine mesh strainer and set aside.

  4. Add the garlic, smoked paprika, thyme, salt, and black pepper to the skillet and cook for an additional minute, stirring constantly.
  5. Stir in the diced tomatoes and black beans and cook for 5-7 minutes, or until heated through.
  6. Once the wild rice is cooked, add it to the skillet with the vegetable mixture and stir to combine.
  7. Remove from heat and stir in the chopped parsley.
  8. Serve hot with lime wedges on the side.
