Ingredients

  • 1 pound boneless, skinless chicken breasts

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika

  • 1 cup uncooked white rice
  • 2 cups water

Method

  1. In a small bowl, mix together the salt, black pepper, cumin, chili powder, garlic powder, onion powder, paprika, and cayenne pepper.
  2. Cut the chicken breasts into bite-sized pieces and place them in a large bowl. Rub the spice mixture over the chicken, making sure it is evenly coated.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.
  4. While the chicken is cooking, rinse the rice under cold water until the water runs clear. Add the rice and water to a saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
  5. Once the chicken is cooked, remove it from the skillet and set it aside. In the same skillet, add 1/4 cup of water and scrape up any browned bits from the bottom of the skillet.
  6. Reduce the heat to low and return the chicken to the skillet. Stir to coat the chicken in the pan sauce and cook for an additional 2-3 minutes, or until heated through.
  7. Fluff the rice with a fork and divide it between four bowls. Top each bowl with the spicy chicken and pan sauce.
  8. Serve immediately.
