For the vegan chicken:- 1 block of firm tofu
- 1 tablespoon of olive oil
- 1 teaspoon of smoked paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1 cup of brown rice
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 teaspoon of smoked paprika
- 1 teaspoon of dried thyme
- Salt and pepper to taste

Method
For the vegan chicken:- Remove the tofu from its packaging and press it to remove excess water.
- Cut the tofu into small cubes.
- Heat the olive oil in a large skillet over medium heat.
- Add the tofu, smoked paprika, garlic powder, onion powder, dried thyme, salt, and pepper to the skillet.
- Cook the tofu for 10-12 minutes, stirring occasionally, until it is golden brown and crispy.
- Remove the tofu from the skillet and set it aside.
- Heat the olive oil in a pot over medium heat.
- Add the onion and garlic to the pot and cook for 2-3 minutes, until the onion is translucent.
- Add the red bell pepper, smoked paprika, dried thyme, salt, and pepper to the pot and cook for an additional 2-3 minutes.
- Add the brown rice and vegetable broth to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 20-25 minutes, or until it is fully cooked and the liquid has been absorbed.
- Fluff the rice with a fork and stir in the cooked tofu.
