The following are the ingredients required to make Rice Kurdai:- 2 cups rice flour
- 1 tsp cumin seeds
- 1 tsp sesame seeds
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- 1 tsp asafoetida
- 2 tbsp oil
- Salt to taste
- Water as required

- Rolling pin
- Knife
- Deep frying pan
- Slotted spoon
Method
The following is the method to make Rice Kurdai:- Take a mixing bowl and add rice flour, cumin seeds, sesame seeds, red chilli powder, turmeric powder, asafoetida, oil, and salt to taste. Mix well.
- Add water little by little to make a soft dough.
- Take a small portion of the dough and make a ball out of it.
- Roll it into a thin circle on the rolling board using a rolling pin.
- Cut it into diamond shapes with a knife.
- Heat oil in a deep frying pan.
- Add the diamond-shaped dough pieces to the hot oil.
- Fry them on medium flame till they turn golden brown in colour.
- Remove them from the oil using a slotted spoon and place them on a tissue paper to absorb the excess oil.
- Store them in an airtight container once they cool down.
Notes
- Make sure to roll the dough into thin circles to get crispy kurdai.
- Do not overcrowd the frying pan while frying kurdai.
- Store the kurdai in an airtight container to keep them crispy for a longer time.
