- 6 large bell peppers
- 1 pound ground beef
- 1 cup minute rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes, drained
- 1 can tomato sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley

Method
- Preheat oven to 375°F.
- Cut off the tops of the peppers and remove the seeds and membranes.
- In a large pot of boiling water, blanch the peppers for 3-4 minutes until slightly softened. Drain and set aside.
- In a pan, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion and garlic to the pan and cook until the onion is translucent.
- Add the cooked minute rice, diced tomatoes, tomato sauce, salt, black pepper, paprika, and cayenne pepper to the pan. Cook for an additional 5-7 minutes.
- Stir in the chopped parsley.
- Fill each pepper with the rice and beef mixture and place them in a baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is hot.

Notes
