Description

Ingredient

  • 2 cups Basmati rice
  • 4 cups water
  • 1 onion, sliced
  • 1 potato, cubed
  • 1 carrot, cubed
  • 1 cup green peas
  • 4 cloves garlic, minced
  • 1-inch ginger, minced
  • 2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 2 tbsp oil
  • Salt to taste
  • Coriander leaves for garnish

Method

  1. Wash and soak the rice for 30 minutes.
  2. In a large pot, heat oil over medium heat.
  3. Add cumin seeds and mustard seeds and let them splutter.
  4. Add sliced onions, minced garlic, minced ginger, and chopped green chilies. Saute until onions are translucent.
  5. Add cubed potatoes and carrots, and green peas. Mix well and cook for 5 minutes.
  6. Add turmeric powder, coriander powder, and garam masala powder. Mix well and cook for 2 minutes.
  7. Add soaked rice and mix well.
  8. Add 4 cups of water and salt to taste.
  9. Bring it to a boil and reduce the heat to low. Cover the pot and let it cook for 20 minutes.
  10. After 20 minutes, turn off the heat and let it sit for 5 minutes.
  11. Fluff the rice with a fork and garnish with coriander leaves.
  12. Andhra Pulao Rice is ready to serve.
