- 2 cups Basmati rice
- 4 cups water
- 1 onion, sliced
- 1 potato, cubed
- 1 carrot, cubed
- 1 cup green peas
- 4 cloves garlic, minced
- 1-inch ginger, minced
- 2 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 2 tbsp oil
- Salt to taste
- Coriander leaves for garnish

Method
- Wash and soak the rice for 30 minutes.
- In a large pot, heat oil over medium heat.
- Add cumin seeds and mustard seeds and let them splutter.
- Add sliced onions, minced garlic, minced ginger, and chopped green chilies. Saute until onions are translucent.
- Add cubed potatoes and carrots, and green peas. Mix well and cook for 5 minutes.
- Add turmeric powder, coriander powder, and garam masala powder. Mix well and cook for 2 minutes.
- Add soaked rice and mix well.
- Add 4 cups of water and salt to taste.
- Bring it to a boil and reduce the heat to low. Cover the pot and let it cook for 20 minutes.
- After 20 minutes, turn off the heat and let it sit for 5 minutes.
- Fluff the rice with a fork and garnish with coriander leaves.
- Andhra Pulao Rice is ready to serve.
