Ingredients

  • 1 cup rice vermicelli
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 green chili, chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/2 tsp salt, or to taste
  • 1/2 lemon, juiced
  • 2 tbsp oil
  • 1 tbsp chopped coriander leaves

Method

  1. Boil water in a pan and add rice vermicelli. Cook for 2-3 minutes or until it is soft. Drain and keep aside.
  2. In a pan, heat oil and add mustard seeds and cumin seeds. Let them splutter.
  3. Add chopped onion, green chili and saute for 2-3 minutes or until onion turns golden brown.
  4. Add chopped tomato and cook for 2-3 minutes or until it becomes soft.
  5. Add turmeric powder, red chili powder, and salt. Mix well.
  6. Add the cooked rice vermicelli to the pan and mix well.
  7. Add lemon juice and mix well.
  8. Garnish with chopped coriander leaves.
  9. Rice vermicelli upma is ready to serve.

Notes

You can add vegetables like peas, carrots, and capsicum to the upma to make it more nutritious. You can also add peanuts or cashews for a crunchy texture.
