Description

Sticky rice dumplings, also known as zongzi, are a traditional Chinese dish made of glutinous rice wrapped in bamboo or reed leaves. These dumplings are typically filled with savory ingredients like pork belly or salted egg yolk, but can also be sweetened with red bean paste or jujube.

Ingredients

For the filling: - 1 lb. pork belly, diced - 5 dried shiitake mushrooms, rehydrated and diced - 1/2 cup dried shrimp, soaked and diced - 1/4 cup dried scallops, soaked and diced - 2 tbsp. soy sauce - 2 tbsp. oyster sauce - 1 tbsp. dark soy sauce - 1 tbsp. sugar - 1 tsp. sesame oil - 1/2 tsp. white pepper For the dumpling: - 2 lbs. glutinous rice, soaked overnight - 20 bamboo or reed leaves, soaked in warm water overnight

Equipment

- Large pot for boiling the dumplings - Steamer basket or colander - Kitchen twine - Mixing bowl

Method

1. In a large mixing bowl, combine the diced pork belly, shiitake mushrooms, dried shrimp, dried scallops, soy sauce, oyster sauce, dark soy sauce, sugar, sesame oil, and white pepper. Mix well and set aside. 2. Drain the soaked glutinous rice and mix with a pinch of salt. 3. Take two bamboo or reed leaves and overlap them in a cross shape. Place a spoonful of the glutinous rice in the center of the leaves. 4. Add a spoonful of the filling on top of the rice and cover with more glutinous rice. 5. Fold the leaves over the top of the rice filling and tie with kitchen twine. 6. Repeat until all the filling and rice is used up. 7. In a large pot, bring water to a boil and add the dumplings. Boil for 20 minutes. 8. Transfer the dumplings to a steamer basket or colander and steam for an additional 1-2 hours. 9. Remove the dumplings from the steamer and let cool for a few minutes before unwrapping and serving.

- Sticky rice dumplings can be stored in the fridge for up to a week or frozen for longer. - To reheat, steam the dumplings for 10-15 minutes or microwave for 1-2 minutes. - You can also add other fillings like chicken, peanuts, or chestnuts to the dumplings.
