Description

Akki roti is a popular South Indian flatbread made with rice flour. However, in this recipe, we will be using cooked rice instead of rice flour to make the roti. This makes the roti softer and more nutritious. It is a great way to use leftover rice and is perfect for breakfast or lunch.

Ingredients

  • 2 cups cooked rice
  • 1 cup rice flour
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 cup grated coconut
  • 1/4 cup chopped coriander leaves
  • 1 tsp cumin seeds
  • 1 tsp salt
  • 2 tbsp oil
  • Water, as required

Method

  1. In a bowl, mash the cooked rice using a spoon or your hands.
  2. Add rice flour, chopped onion, green chilies, grated coconut, coriander leaves, cumin seeds, and salt. Mix well.
  3. Add water gradually and knead the mixture into a soft dough.
  4. Divide the dough into equal-sized balls.
  5. Take a ball and flatten it into a disc. Dust it with some rice flour.
  6. Roll out the disc using a rolling pin into a thin roti.
  7. Heat a non-stick tawa or griddle over medium-high heat.
  8. Place the roti on the tawa and cook for 2-3 minutes on one side.
  9. Flip the roti and cook for another 2-3 minutes on the other side.
  10. Drizzle some oil around the edges of the roti and cook for another minute or until both sides are golden brown.
  11. Remove the roti from the tawa and repeat the same process with the remaining dough.
  12. Serve hot with chutney or pickle.

Notes

  • Make sure to mash the cooked rice well to avoid any lumps in the dough.
  • The dough should be soft and pliable. If it is too dry, add some more water. If it is too sticky, add some more rice flour.
  • You can add some chopped vegetables like carrots or capsicum to the dough for added nutrition.
