- 2 cups of Basmati rice
- 3 1/2 cups of water
- 1/4 cup of olive oil
- 1 onion, finely chopped
- 1/4 cup of pine nuts
- 2 teaspoons of ground cumin
- 2 teaspoons of ground coriander
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cardamom
- 1/4 teaspoon of ground allspice
- 1/4 teaspoon of ground ginger
- Salt and pepper to taste

- Large pot with lid
- Frying pan
- Wooden spoon
Method
- Rinse the rice in cold water until the water runs clear.
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and pine nuts and saute until the onion is translucent and the pine nuts are lightly browned.
- Add the rice, cumin, coriander, cinnamon, cardamom, allspice, ginger, salt, and pepper to the pot and stir until the rice is coated in the spices.
- Add the water to the pot and bring to a boil.
- Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 18-20 minutes, or until the water has been absorbed and the rice is tender.
- Remove the pot from heat and let it sit, covered, for 5-10 minutes.
- Fluff the rice with a fork and serve hot.
Notes
