Ingredients

  • 1 kg chicken pieces, skinless and bone-in

  • 1 cinnamon stick
  • 5 cardamom pods
  • 5 whole cloves

  • 1 teaspoon black pepper powder
  • Salt, to taste
  • 1/4 cup oil
  • 1/4 cup raisins
  • 1/4 cup almonds, slivered and toasted

Method

  1. Wash the rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a large pot over medium heat. Add the chicken pieces and fry until they are browned on all sides. Remove the chicken from the pot and set aside.
  3. Add the onion and garlic to the pot and sauté until they are soft and translucent.
  4. Add the tomatoes, carrot, and all the spices to the pot and cook for a few minutes until fragrant.
  5. Return the chicken pieces to the pot and add 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  6. Remove the chicken from the pot and set aside. Strain the remaining liquid and set aside.
  7. Heat oil in a frying pan over medium heat. Add the raisins and almonds and fry until they are golden brown. Remove from heat and set aside.
  8. Add the rice to the pot with the strained liquid and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and tender.
  9. Arrange the chicken pieces on top of the cooked rice in the pot. Cover the pot and simmer for another 10 minutes.
  10. Transfer the rice and chicken to a serving dish and garnish with the fried raisins and almonds.
