- 1 kg chicken pieces, skinless and bone-in
- 2 cups long-grain rice
- 4 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 tomatoes, chopped
- 1 carrot, chopped
- 1 cinnamon stick
- 5 cardamom pods
- 5 whole cloves
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon black pepper powder
- Salt, to taste
- 1/4 cup oil
- 1/4 cup raisins
- 1/4 cup almonds, slivered and toasted

- A frying pan
- A wooden spoon
- A sharp knife

Method
- Wash the rice and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a large pot over medium heat. Add the chicken pieces and fry until they are browned on all sides. Remove the chicken from the pot and set aside.
- Add the onion and garlic to the pot and sauté until they are soft and translucent.
- Add the tomatoes, carrot, and all the spices to the pot and cook for a few minutes until fragrant.
- Return the chicken pieces to the pot and add 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
- Remove the chicken from the pot and set aside. Strain the remaining liquid and set aside.
- Heat oil in a frying pan over medium heat. Add the raisins and almonds and fry until they are golden brown. Remove from heat and set aside.
- Add the rice to the pot with the strained liquid and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and tender.
- Arrange the chicken pieces on top of the cooked rice in the pot. Cover the pot and simmer for another 10 minutes.
- Transfer the rice and chicken to a serving dish and garnish with the fried raisins and almonds.
