Ingredients

  • 2 cups rice flour
  • 1/2 cup urad dal flour

  • 1/4 cup butter or ghee
  • Oil for frying

Method

  1. In a mixing bowl, combine rice flour, urad dal flour, cumin seeds, sesame seeds, red chili powder, asafoetida, and salt. Mix well.
  2. Add butter or ghee to the mixture and mix well until it resembles breadcrumbs.
  3. Add water gradually and knead into a soft and smooth dough. The dough should not be too sticky or too dry.
  4. Heat oil in a heavy-bottomed pan for frying.
  5. Take a small portion of the dough and shape it into a cylindrical shape that fits into the murukku press.
  6. Grease the murukku press with oil and place the dough inside it.
  7. Press the dough through the murukku press onto a plate or directly into the hot oil.
  8. Fry the murukku until it turns golden brown and crispy.
  9. Remove the murukku from the oil and drain it on a paper towel to remove excess oil.
  10. Repeat the process with the remaining dough.
  11. Store the murukku in an airtight container once it cools down.

Notes

  • Make sure the oil is hot enough before frying the murukku.
  • Do not overcrowd the pan while frying the murukku.
  • You can adjust the spice level according to your preference.
  • Adding butter or ghee gives a nice flavor and texture to the murukku.
