This dish is a combination of juicy, succulent chicken, fragrant rice cooked in chicken stock, and a delicious chilli sauce. - 1 whole chicken (about 1.5kg)
- 2 cups of rice
- 4 cloves of garlic, minced
- 1 thumb-sized ginger, sliced
- 2 pandan leaves, tied into knots
- 3 cups of chicken broth
- Salt and pepper to taste
- 1 tablespoon of sesame oil
- 1 tablespoon of dark soy sauce
- 2 tablespoons of vegetable oil
- 1 cucumber, sliced
- 1 tomato, sliced

Method
- Preheat oven to 200°C.
- Boil chicken broth in a pot.
- Wash rice and drain.
- Heat vegetable oil in a pan over medium heat.
- Add garlic and ginger and sauté until fragrant.
- Add the rice and stir-fry for 1 minute.
- Transfer the rice into a rice cooker and add the chicken broth, pandan leaves, salt, and pepper. Cook the rice according to the rice cooker's instructions.
- Clean and pat dry the chicken. Rub sesame oil and dark soy sauce all over the chicken.
- Place the chicken on a baking tray and roast for 30-40 minutes, turning the chicken occasionally until it is cooked and the skin is crispy.
- Remove the chicken from the oven and let it rest for 10 minutes.
- Carve the chicken and serve it with the rice, cucumber, tomato, and chilli sauce.
