Ingredients

  • 1 cup cooked rice
  • 1 cup curd
  • 1/4 cup milk
  • 1/4 tsp turmeric powder
  • 1/4 tsp salt
  • 1/4 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1/4 tsp asafoetida
  • 1 green chili, chopped
  • 1 tbsp chopped ginger
  • 1 tbsp chopped curry leaves
  • 2 tbsp chopped coriander leaves
  • 1 tbsp ghee

Method

  1. Mash the cooked rice with a fork and keep it aside.
  2. In a bowl, whisk the curd and milk together until smooth.
  3. Add the turmeric powder and salt to the curd mixture and mix well.
  4. Heat the ghee in a pan and add the mustard seeds, cumin seeds, and asafoetida.
  5. When the mustard seeds start to splutter, add the chopped green chili, ginger, and curry leaves.
  6. Saute for a minute and then add the mashed rice to the pan.
  7. Mix well and saute for 2-3 minutes.
  8. Remove the pan from heat and let it cool for a minute.
  9. Add the curd mixture to the pan and mix well.
  10. Garnish with chopped coriander leaves.
  11. Refrigerate for 1-2 hours before serving.

Notes

  • You can add grated carrots, cucumber, and pomegranate seeds to add more texture and flavor to the dish.
  • Make sure to use fresh curd for best results.
  • You can adjust the spice level according to your taste.
