Ingredients

For Schezwan Sauce:
  • 10-12 Dried Red Chillies
  • 5-6 Garlic cloves
  • 1-inch Ginger
  • 2 tbsp Oil
  • 1 tsp Soy Sauce
  • 1 tsp Vinegar
  • 1 tsp Sugar
  • 1/2 tsp Salt
For Schezwan Rice:
  • 1 cup Cooked Rice
  • 1 Onion, chopped
  • 1 Carrot, chopped
  • 1 Capsicum, chopped
  • 2-3 Garlic cloves, chopped
  • 2 Green Chillies, chopped
  • 2 tbsp Oil
  • Salt to taste
  • Coriander leaves for garnishing

Method

Schezwan Sauce:

  1. Soak the dried red chillies in warm water for 30 minutes.
  2. Drain the water and grind the red chillies along with garlic and ginger into a fine paste.
  3. Heat oil in a pan and add the ground paste.
  4. Saute for 2-3 minutes and add soy sauce, vinegar, sugar, and salt.
  5. Mix well and cook for 2-3 minutes.
  6. Your Schezwan sauce is ready. Keep it aside.

Schezwan Rice:

  1. Heat oil in a pan and add chopped garlic and green chillies.
  2. Saute for a few seconds and add chopped onions.
  3. Saute till onions turn translucent.
  4. Add chopped carrots and capsicum and saute for 2-3 minutes.
  5. Add salt and mix well.
  6. Add the Schezwan sauce and mix well.
  7. Add the cooked rice and mix well.
  8. Cover the pan and cook for 2-3 minutes on low flame.
  9. Your Schezwan rice is ready.
  10. Garnish with coriander leaves and serve hot.

  • You can adjust the spiciness of the Schezwan sauce according to your taste.
  • You can add more vegetables like beans, peas, and corn to make it more nutritious.
  • You can use leftover rice to make this recipe.
