For Schezwan Sauce:- 10-12 Dried Red Chillies
- 5-6 Garlic cloves
- 1-inch Ginger
- 2 tbsp Oil
- 1 tsp Soy Sauce
- 1 tsp Vinegar
- 1 tsp Sugar
- 1/2 tsp Salt
- 1 cup Cooked Rice
- 1 Onion, chopped
- 1 Carrot, chopped
- 1 Capsicum, chopped
- 2-3 Garlic cloves, chopped
- 2 Green Chillies, chopped
- 2 tbsp Oil
- Salt to taste
- Coriander leaves for garnishing

Method
Schezwan Sauce:
- Soak the dried red chillies in warm water for 30 minutes.
- Drain the water and grind the red chillies along with garlic and ginger into a fine paste.
- Heat oil in a pan and add the ground paste.
- Saute for 2-3 minutes and add soy sauce, vinegar, sugar, and salt.
- Mix well and cook for 2-3 minutes.
- Your Schezwan sauce is ready. Keep it aside.
Schezwan Rice:
- Heat oil in a pan and add chopped garlic and green chillies.
- Saute for a few seconds and add chopped onions.
- Saute till onions turn translucent.
- Add chopped carrots and capsicum and saute for 2-3 minutes.
- Add salt and mix well.
- Add the Schezwan sauce and mix well.
- Add the cooked rice and mix well.
- Cover the pan and cook for 2-3 minutes on low flame.
- Your Schezwan rice is ready.
- Garnish with coriander leaves and serve hot.

- You can adjust the spiciness of the Schezwan sauce according to your taste.
- You can add more vegetables like beans, peas, and corn to make it more nutritious.
