  • A pressure cooker or a pot with a lid
  • A pan

Method

  1. Wash the rice and soak it in water for 15-20 minutes.
  2. Chop the tomatoes, onions, and green chili.
  3. Heat oil in a pan and add mustard seeds and cumin seeds.
  4. When the seeds start to splutter, add chopped onions, minced garlic, and green chili. Saute until the onions turn translucent.
  5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes turn mushy.
  6. Drain the water from the soaked rice and add it to the pan. Saute for 2-3 minutes.
  7. Add 2 cups of water and mix well. Cover the pan with a lid and cook until the rice is done.
  8. Switch off the flame and let the rice rest for 5 minutes. Fluff the rice with a fork.
  9. Garnish with coriander leaves and serve hot with raita or pickle.

  • You can also use leftover rice for this recipe.
