- A pressure cooker or a pot with a lid
- A pan

Method
- Wash the rice and soak it in water for 15-20 minutes.
- Chop the tomatoes, onions, and green chili.
- Heat oil in a pan and add mustard seeds and cumin seeds.
- When the seeds start to splutter, add chopped onions, minced garlic, and green chili. Saute until the onions turn translucent.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes turn mushy.
- Drain the water from the soaked rice and add it to the pan. Saute for 2-3 minutes.
- Add 2 cups of water and mix well. Cover the pan with a lid and cook until the rice is done.
- Switch off the flame and let the rice rest for 5 minutes. Fluff the rice with a fork.
- Garnish with coriander leaves and serve hot with raita or pickle.
