Description

Vietnam Rice Balls, also known as Banh Chung, are a traditional Vietnamese food that is typically eaten during the Lunar New Year holiday. These rice balls are made with sticky rice, pork belly, and mung beans, and then wrapped in banana leaves before being boiled until tender. Ingredients

  • 3 cups glutinous rice
  • 1 pound pork belly
  • 1 cup mung beans
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 tablespoon fish sauce
  • 10-12 banana leaves

Equipment

  • Large pot
  • Large mixing bowl
  • Banana leaf
  • String or twine
  • Colander

Method

  1. Soak the glutinous rice in water for 2 hours.
  2. Soak the mung beans in water for 2 hours.
  3. Cut the pork belly into small pieces and marinate with salt, sugar, and fish sauce for 30 minutes.
  4. Clean the banana leaves and cut them into 8”x 8” squares.
  5. Drain the rice and mix it with the mung beans.
  6. Take two banana leaves and place them on top of each other in a cross shape, with the shiny side facing down.
  7. Place a layer of rice and mung beans mixture on top of the banana leaves.
  8. Add a layer of marinated pork belly on top of the rice and mung beans mixture.
  9. Add another layer of rice and mung beans mixture on top of the pork belly.
  10. Fold the banana leaves over the rice and pork belly, making sure to tuck in the edges to create a square-shaped package.
  11. Tie the package tightly with string or twine.
  12. Place the packages in a large pot and add enough water to cover them.
  13. Bring the water to a boil and then reduce the heat to low, cover the pot and simmer for 8 hours.
  14. Remove the packages from the pot and let them cool for 10-15 minutes before unwrapping.
  15. Slice the rice balls into small pieces and serve.

Notes

It is important to use glutinous rice and not regular rice as it will not stick together. Also, be sure to clean the banana leaves thoroughly before using them.

Recipe Tips
