Method

  1. Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. Heat the oil in a frying pan and sauté the onions until they are soft and translucent.
  3. Add the meat and cook until it is browned on all sides.
  4. Add the garlic, cumin, coriander, black pepper, and salt. Cook for 1-2 minutes.
  5. Add 2 cups of water and bring to a boil. Reduce heat and simmer for 30 minutes.
  6. In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.
  7. Drain the rice and add it to the pot of boiling water. Boil for 5-7 minutes or until the rice is partially cooked.
  8. Drain the rice using a colander.
  9. In the large pot, layer the partially cooked rice and the meat mixture. Start with a layer of rice, then a layer of meat, and continue until all the rice and meat is used up. The top layer should be rice.
  10. Cover the pot with a lid and cook over low heat for 45 minutes to 1 hour or until the rice is fully cooked.
