Ingredients

  • 3 cups long-grain basmati rice
  • 1 pound lamb meat, cut into cubes

  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 3 1/2 cups water
  • 1/4 cup vegetable oil
  • 1/2 cup raisins
  • 1/2 cup almonds
  • 1/2 cup carrots, sliced
  • Salt to taste

Method

  1. Wash the rice with cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until they are soft and translucent, but not browned.
  3. Add the lamb meat to the pot and cook until browned on all sides.
  4. Add the garlic, cumin, coriander, cardamom, cinnamon, and black pepper to the pot. Stir to combine and cook for 1-2 minutes until fragrant.
  5. Add the water to the pot and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes until the lamb is tender.
  6. Drain the rice and add it to the pot with the lamb. Stir to combine and season with salt to taste.
  7. Bring the rice to a boil, then reduce the heat to low, cover the pot with a lid and cook for 20-25 minutes until the rice is tender and fluffy.
  8. In a frying pan, heat 1 tablespoon of vegetable oil over medium heat. Add the raisins, almonds, and carrots to the pan and fry until golden brown.
  9. Once the rice is cooked, remove the pot from the heat and let it sit for 5-10 minutes.
  10. Fluff the rice with a fork and transfer it to a serving dish. Garnish with the fried raisins, almonds, and carrots.

Notes

  • This dish can also be made with chicken or beef instead of lamb.
  • For a vegetarian version, you can substitute the meat with chickpeas or tofu.
