Description

Ingredients

- 2 cups of long-grain rice - 4 cups of tomato sauce - 1 onion (chopped) - 2 red bell peppers (chopped) - 2 scotch bonnet peppers (chopped) - 2 tablespoons of tomato paste - 2 teaspoons of thyme - 2 teaspoons of curry powder - 2 teaspoons of paprika - 2 teaspoons of garlic powder - 2 teaspoons of ginger powder - 2 teaspoons of salt - 1 teaspoon of black pepper - 2 bay leaves - 3 tablespoons of vegetable oil - 4 cups of water or chicken stock - 1 teaspoon of smoked paprika (optional)

- Large pot with a lid - Wooden spoon - Measuring cups and spoons - Chopping board and knife

Method

1. Rinse the rice with cold water until the water runs clear. Drain and set aside. 2. Heat the oil in a large pot over medium-high heat. Add the onions and sauté for 2-3 minutes until translucent. 3. Add the red bell peppers and scotch bonnet peppers and sauté for another 3-4 minutes until they are soft. 4. Add the tomato paste, thyme, curry powder, paprika, garlic powder, ginger powder, salt, black pepper, and bay leaves. Stir to combine and cook for another 3-4 minutes until fragrant. 5. Add the tomato sauce and water or chicken stock. Stir to combine and bring to a boil. 6. Add the rice and stir to combine. Reduce heat to low, cover the pot with a lid, and simmer for 30-40 minutes until the rice is cooked and tender. 7. If the rice is still hard, add a little more water or chicken stock and continue cooking until it is soft. 8. Stir in the smoked paprika (optional) and adjust seasoning with salt and black pepper if necessary. 9. Serve hot with fried plantains, salad, or any protein of your choice.

Notes

- To make the tomato sauce, blend together 4 large tomatoes, 1 red bell pepper, and 1 scotch bonnet pepper until smooth. - You can also use canned tomato sauce if you prefer. - Jollof rice can be cooked with chicken, beef, shrimp, or any protein of your choice. - Leftover jollof rice can be stored in an airtight container in the fridge for up to 3 days.
