Ingredients

  • 1 cup of basmati rice
  • 2 cups of water
  • 1 onion, finely chopped
  • 2 green chilies, slit

  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons oil
  • 1 tablespoon ghee
  • 1 tablespoon tamarind pulp
  • 1 tablespoon chopped coriander leaves

Method

  1. Wash the rice in running water until the water runs clear. Soak the rice in water for 30 minutes.
  2. Take a heavy-bottomed pan and heat oil and ghee in it.
  3. Add chopped onions and green chilies to the pan and sauté until the onions turn translucent.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Add coriander powder, cumin powder, garam masala powder, red chili powder, turmeric powder, and salt to taste. Mix well and sauté for another minute.
  6. Add water and tamarind pulp to the pan and bring it to a boil.
  7. Drain the water from the soaked rice and add it to the boiling water. Mix well.
  8. Cover the pan with a lid and cook the rice on low flame for 20 minutes or until the rice is cooked and the water is absorbed.
  9. Once the rice is cooked, turn off the flame and let it rest for 5 minutes.
  10. Garnish the rice with chopped coriander leaves and serve hot.

Notes

  • You can adjust the quantity of spices and chilies as per your taste preference.
  • Adding tamarind pulp enhances the tangy flavor of the dish. You can also use lemon juice as a substitute.
  • Make sure to soak the rice for at least 30 minutes before cooking to get fluffy and separated grains.
