Ingredients

  • 1 cup rice
  • 1/2 cup toor dal
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 1 carrot, chopped
  • 1 potato, chopped
  • 1/2 cup green beans, chopped
  • 1/2 cup peas
  • 3-4 cloves garlic, chopped
  • 1 inch ginger, chopped
  • 2-3 green chilies, chopped
  • 2 tbsp sambar powder
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 2 tbsp oil
  • Salt to taste
  • 3 cups water
  • Coriander leaves for garnish

Method

  1. Soak the rice and toor dal in water for at least an hour.
  2. Heat oil in a cooker and add cumin and mustard seeds.
  3. When the seeds start to splutter, add chopped onions, ginger, garlic, and green chilies. Saute until the onions turn translucent.
  4. Add chopped tomatoes and saute until they turn soft and mushy.
  5. Add chopped vegetables, sambar powder, turmeric powder, and salt. Mix well and saute for a couple of minutes.
  6. Drain the water from the soaked rice and dal and add them to the cooker. Mix well with the vegetables.
  7. Add 3 cups of water and mix well. Check for salt and adjust if needed.
  8. Cover the cooker with the lid and cook on high flame until the pressure builds up.
  9. Reduce the flame to low and cook for 10-12 minutes.
  10. Turn off the flame and let the pressure release naturally.
  11. Garnish with coriander leaves and serve hot with papad or raita.

Notes

  • You can add any vegetables of your choice to this sambar rice recipe.
  • If you do not have sambar powder, you can use a mix of coriander powder, cumin powder, and red chili powder.
  • If you like your sambar rice to be more tangy, you can add tamarind pulp or tomato puree.
