Biryani is a popular rice dish in India and seeraga samba rice veg biryani is a delicious variation of it. This biryani is made using fragrant seeraga samba rice, mixed vegetables, and a blend of spices. It is a perfect meal for lunch or dinner and can be served with raita or salad.

Ingredients

  • 1 cup seeraga samba rice
  • 2 cups water
  • 1 onion, sliced
  • 1 tomato, chopped
  • 1 cup mixed vegetables (carrots, beans, peas, cauliflower)
  • 2-3 green chillies, slit
  • 1 tsp ginger garlic paste
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1/2 cup curd
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • 2 tbsp oil or ghee
  • 2 bay leaves
  • 3-4 cloves
  • 1 inch cinnamon stick
  • 1 star anise
  • 1 cardamom
  • Salt to taste

Equipment

  • Pressure cooker or pot with lid
  • Knife and chopping board
  • Spatula
  • Bowl
  • Spoon

Method

  1. Wash the seeraga samba rice and soak it for 30 minutes.
  2. In a pressure cooker or pot, heat oil or ghee and add bay leaves, cloves, cinnamon stick, star anise, and cardamom.
  3. Once the spices start to sizzle, add sliced onions and green chillies. Saute until the onions turn translucent.
  4. Add ginger garlic paste and saute for a minute.
  5. Add chopped tomatoes, mixed vegetables, and all the spice powders (red chilli, coriander, turmeric, and garam masala). Mix well and cook for 2-3 minutes.
  6. Add curd, coriander leaves, and mint leaves. Mix well and cook for another minute.
  7. Drain the water from the soaked rice and add it to the cooker or pot. Mix well.
  8. Add 2 cups of water and salt to taste. Mix well and close the lid of the pressure cooker or pot.
  9. Cook for 2 whistles in pressure cooker or cook for 15-20 minutes in pot until the rice is cooked and the water is absorbed.
  10. Once done, switch off the flame and let it rest for 10 minutes.
  11. Fluff the rice with a fork and serve hot with raita or salad.

Notes

  • You can use any vegetables of your choice in this biryani.
  • You can also add paneer or tofu to make it more flavorful.
  • Adjust the spice level according to your taste.
