Method

1. Wash the rice thoroughly and soak it in water for 20 minutes. 2. In a pressure cooker, add 2 cups of water and the soaked rice. Cook the rice for 3-4 whistles. 3. Once the pressure is released, open the cooker and fluff the rice with a fork. 4. In a pan, heat oil and add cumin seeds, mustard seeds, urad dal, and chana dal. Fry them till they turn golden brown. 5. Add chopped onions and green chilies and fry till the onions turn translucent. 6. Add ginger-garlic paste and fry for a minute. 7. Add chopped tomatoes and cook till they turn soft. 8. Add turmeric powder, red chili powder, coriander powder, and salt to taste. Mix well. 9. Add the cooked rice to the pan and mix well. 10. Garnish with coriander leaves and serve hot with raita or papad.

- You can use any vegetables of your choice to add to the variety rice. - You can also add boiled lentils to the rice to make it more nutritious. - You can adjust the spice level according to your taste.
