- 1/4 cup diced water chestnuts

Method
1. In a large mixing bowl, combine the glutinous rice flour, alkaline water, water, and sugar. Mix well until a dough forms. 2. Cover the dough with cling wrap and let it rest for 30 minutes. 3. In the meantime, prepare the filling. In a separate bowl, mix together the ground pork, bamboo shoots, shiitake mushrooms, water chestnuts, soy sauce, oyster sauce, sesame oil, sugar, and white pepper. 4. Divide the dough into small, equal-sized portions and roll them into balls. 5. Flatten each ball with a rolling pin to form a circle. 6. Place a spoonful of filling in the center of each circle and fold the edges of the dough up to cover the filling. Pinch the edges together to seal the dumplings. 7. Place the dumplings in a steamer basket or bamboo steamer, making sure they are not touching each other. 8. Steam the dumplings for 20 minutes, or until they are cooked through. 9.
