Ingredients

  • 3 medium-sized potatoes, peeled and cubed

  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • 2 tablespoons oil
  • Salt, to taste
  • Water, as needed

Equipment

Method

  1. Heat oil in a pressure cooker or pot over medium heat.
  2. Add mustard seeds and cumin seeds and let them splutter.
  3. Add chopped onions, green chili, and ginger-garlic paste. Saute until onions are translucent.
  4. Add turmeric powder, coriander powder, and garam masala powder. Stir for a few seconds.
  5. Add cubed potatoes and salt. Mix well.
  6. Add enough water to cover the potatoes. Close the pressure cooker or pot and cook for 2-3 whistles or until potatoes are cooked.
  7. In the meantime, blend grated coconut and yogurt into a smooth paste.
  8. Once the pressure is released, open the cooker or pot and add the coconut-yogurt paste. Mix well.
  9. Cook the curry for a few more minutes until it comes to a boil.
  10. Turn off the heat and transfer the curry to a serving dish.
  11. Aloo kurma is ready to be served with rice.

Notes

  • You can adjust the spiciness of the curry by adding or reducing the amount of green chili used.
  • If you don't have a pressure cooker, you can use a pot and cook the potatoes until they are soft.
  • If the curry is too thick, you can add more water to get the desired consistency.
