For the rice balls:- 2 cups cooked rice
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/2 cup finely chopped cooked ham
- 1/2 cup finely chopped mozzarella cheese
- 2 eggs
- 1/2 cup breadcrumbs
- 1/4 cup vegetable oil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 1/4 teaspoon red pepper flakes (optional)

Method
1. In a large bowl, mix together the cooked rice, grated parmesan cheese, chopped parsley, chopped basil, cooked ham, and mozzarella cheese. 2. Beat the eggs in a separate bowl and add them to the rice mixture. Mix well. 3. Form the rice mixture into small balls, about 2-3 inches in diameter. 4. Place the breadcrumbs in a separate bowl and roll each rice ball in the breadcrumbs until coated. 5. Heat the vegetable oil in a large skillet over medium-high heat. 6. Add the rice balls to the skillet and cook until golden brown on all sides, about 3-4 minutes per side. 7. Remove the rice balls from the skillet and place them on a paper towel-lined plate to drain any excess oil. 8. To make the tomato sauce, heat the olive oil in a small saucepan over medium heat. 9. Add the chopped onion and garlic to the pan and cook until softened, about 3-4 minutes. 10. Add the crushed tomatoes and red pepper flakes (if using) to the pan and bring to a simmer. 11. Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally. 12. Season the sauce with salt and pepper to taste. 13. Serve the rice balls hot with a side of tomato sauce.Notes
