Ingredients

Method

1. Preheat the oven to 425°F. Place the beef bones on a baking sheet and roast for 30 minutes. 2. In a large pot, add the roasted beef bones, onion, ginger, star anise, cinnamon sticks, coriander seeds, fennel seeds, salt, and sugar. Cover with water and bring to a boil. 3. Reduce the heat to low and simmer for 3 hours. Skim off any impurities that rise to the surface. 4. Remove the beef bones and strain the broth through a cheesecloth-lined strainer. Discard the solids. 5. Slice the beef brisket into thin pieces. 6. Cook the rice noodles according to the package instructions. 7. To serve, place a portion of noodles in a bowl. Add some beef brisket on top. Pour the hot broth over the noodles and beef. Add bean sprouts, Thai basil, cilantro, and lime wedges to taste. 8. Serve with hoisin sauce and sriracha sauce on the side.

Notes

- You can use beef chuck or beef shank instead of brisket. - You can add other spices like cardamom or cloves to the broth for additional flavor. - You can use chicken bones instead of beef bones for a lighter broth.
