Ingredients

Method

  1. Wash the glutinous rice and soak it in water for 30 minutes.
  2. In a large mixing bowl, combine the drained glutinous rice, coconut milk, sugar, and salt.
  3. Stir the mixture until the sugar has dissolved and the ingredients are well combined.
  4. Take a banana leaf square and spoon about 2 tablespoons of the rice mixture onto the center of the leaf.
  5. Spread the mixture into a rectangular shape leaving a small border around the edge.
  6. Roll the banana leaf tightly around the rice mixture, folding in the sides as you go.
  7. Tie the ends of the banana leaf with kitchen twine to secure the suman.
  8. Repeat steps 4-7 with the remaining rice mixture.
  9. Arrange the suman in a steamer and cook for 1 hour and 30 minutes.
  10. Remove from the steamer and let cool for a few minutes before serving.

Notes

  • Make sure to use glutinous rice for this recipe as it's the type of rice that will give the suman its sticky texture.
  • If banana leaves are not available, you can use parchment paper as a substitute.
