Ingredients

  • 1 cup toor dal
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 carrot, chopped
  • 1 potato, chopped
  • 1 drumstick, chopped
  • 1/2 cup tamarind pulp
  • 3 tbsp sambar powder
  • 1 tsp turmeric powder
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp fenugreek seeds
  • 2 dried red chillies
  • 1 sprig curry leaves
  • 3 tbsp oil
  • Salt to taste
  • Water as required

Equipment

  • Pressure cooker
  • Heavy-bottomed pan
  • Wooden spoon
  • Knife
  • Cutting board

Method

  1. Wash the toor dal thoroughly and soak it in water for 10 minutes.
  2. Meanwhile, heat oil in a pressure cooker and add mustard seeds, cumin seeds, fenugreek seeds, dried red chillies and curry leaves. Saute for a few seconds until the mustard seeds pop.
  3. Add chopped onions and saute until they turn translucent.
  4. Add chopped tomatoes and saute until they turn soft and mushy.
  5. Add the chopped vegetables and saute for a few minutes.
  6. Add turmeric powder, sambar powder and salt. Mix well.
  7. Add the soaked toor dal and water as required. Mix well and pressure cook for 3 to 4 whistles.
  8. Once the pressure releases, open the lid and add tamarind pulp. Mix well and boil for a few minutes.
  9. Adjust salt and consistency as required.
  10. Garnish with coriander leaves and serve hot with rice.

Notes

  • You can add any vegetables of your choice to this sambar.
  • If you do not have sambar powder, you can make it at home by roasting and grinding coriander seeds, cumin seeds, fenugreek seeds, dried red chillies, and curry leaves.
  • Do not skip adding tamarind pulp as it gives a tangy flavor to the sambar.
