Description

Rice wine is a traditional alcoholic beverage made from rice. It is commonly consumed in many Asian countries, including China, Japan, Korea, and Vietnam. The wine has a sweet, slightly sour taste and a mild aroma. In this article, we will discuss the preparation of traditional rice wine.

Prep Time

The preparation time for rice wine is around 7-10 days. However, fermentation time can vary depending on the temperature and climate.

Cook Time

There is no cooking involved in the preparation of rice wine.

Ingredients

  • 2 cups of glutinous rice
  • 2 cups of water
  • 1/2 cup of yeast ball
  • 1/2 cup of sugar

Equipment

  • Large pot
  • Jar with a tight-fitting lid
  • Cheesecloth
  • Funnel

Method

  1. Wash the glutinous rice and soak it in water for 4-6 hours.
  2. Drain the water and steam the rice until it is fully cooked.
  3. Spread the cooked rice on a clean surface and let it cool down.
  4. Crumble the yeast ball into small pieces and mix it with sugar in a bowl.
  5. Take a clean jar and layer the rice and yeast mixture in it. Start with a layer of rice, followed by a layer of yeast mixture, and so on.
  6. Once you have used up all the rice and yeast mixture, pour water into the jar until it covers the rice completely.
  7. Cover the jar with a cheesecloth and let it ferment for 7-10 days in a cool, dark place.
  8. After 7-10 days, the wine will be ready. Strain the wine through a cheesecloth using a funnel and transfer it to a clean bottle.
  9. Store the bottle in a cool, dark place for a few days to allow it to mature.
  10. Once the wine has matured, it is ready to be consumed.

Notes

  • Make sure all the equipment used in the preparation of rice wine is clean and dry.
  • Keep the jar covered with a cheesecloth to ensure that air can circulate freely.
  • Do not shake the jar during fermentation as it can affect the quality of the wine.
  • The wine may have some sediment at the bottom. You can either leave it or strain it out before consuming.

Nutrition Info

Rice wine contains around 14% alcohol by volume. It is a low-calorie drink and is rich in antioxidants.

Recipe Tips

  • You can adjust the sweetness of the wine by varying the amount of sugar used.
  • You can also add fruits or spices to the wine to enhance the flavor.
  • Make sure to use glutinous rice as it contains more starch than regular rice and is essential for the fermentation process.
  • If you do not have yeast balls, you can use wine yeast or bread yeast as a substitute.

With this traditional rice wine recipe, you can make your own homemade rice wine that is perfect for any occasion. Enjoy!
