Method

1. Soak the basmati rice in water for 30 minutes. 2. In a large pot, heat 3 tablespoons of oil over medium heat. 3. Add the cumin seeds, bay leaves, cardamom pods, and cinnamon sticks to the pot and fry for 1 minute. 4. Add the chopped onion, garlic, ginger, and green chilies to the pot and fry until the onion turns translucent. 5. Add the mixed vegetables to the pot and fry for 5 minutes. 6. Add the coriander powder, garam masala, turmeric powder, red chili powder, and salt to the pot and mix well. 7. Drain the water from the basmati rice and add it to the pot. Mix well. 8. Add 3 cups of water to the pot and bring it to a boil. 9. Once the water starts boiling, reduce the heat to low and cover the pot with a lid. 10. Cook the biryani for 20-25 minutes or until the rice is cooked through. 11. Turn off the heat and let the biryani rest for 5 minutes. 12. Fluff the rice with a fork and serve hot.
