Ingredients

  • 1 cup brown basmati rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup golden raisins
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios

Method

1. Rinse the brown basmati rice in a fine mesh strainer and set aside.

2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes, or until softened.

3. Add the minced garlic, cumin, coriander, salt, and black pepper to the pot. Stir to combine and cook for an additional 1-2 minutes or until fragrant.

7. In the same skillet, add the golden raisins and cook over medium heat for 1-2 minutes or until slightly plump and softened. Remove from heat and set aside.
