- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder

- 2 cups water

1. Rinse the rice and soak it in water for 20 minutes. 2. In a large pot, heat the oil over medium heat. 3. Add the cumin seeds and let them sizzle for a few seconds. 4. Add the chopped onion, grated ginger, and minced garlic. Stir well and sauté until the onions are translucent. 5. Add the diced potatoes and cauliflower florets. Stir well and sauté for 5-7 minutes, until the vegetables are lightly browned. 6. Add the coriander powder, turmeric powder, red chili powder, and salt. Stir well and sauté for 1-2 minutes. 7. Drain the soaked rice and add it to the pot. Stir well and sauté for 1-2 minutes. 8. Add 2 cups of water and stir well. Bring it to a boil. 9. Once it comes to a boil, reduce the heat to low, cover the pot with a lid, and let it cook for 15-20 minutes, until the rice is cooked and the water is absorbed. 10. Once the rice is cooked, turn off the heat and let it sit covered for 5-10 minutes. 11. Fluff the rice with a fork and garnish with chopped fresh cilantro.Notes
