Ingredients

  • 2 cups of long-grain rice
  • 1 can of diced tomatoes
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 2 cups of chicken broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika

Equipment

  • Aroma Rice Cooker
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Spatula

Method

  1. Begin by rinsing the rice in cold water until the water runs clear. This removes excess starch and ensures that the rice cooks evenly.
  2. Preheat the Aroma rice cooker by pressing the cook button.
  3. Once the rice cooker is preheated, add the olive oil and diced onion to the inner pot. Cook for 2-3 minutes or until the onion is soft and translucent.
  4. Add the minced garlic and diced green bell pepper. Cook for an additional 2-3 minutes or until the peppers are soft.
  5. Add the rinsed rice to the inner pot and stir until the rice is coated with the oil and vegetables.
  6. Add the can of diced tomatoes, chicken broth, salt, cumin, chili powder, and paprika to the inner pot. Stir until all ingredients are well combined.
  7. Close the lid of the rice cooker and press the cook button. The rice cooker will automatically switch to the warm setting once the rice is fully cooked.
  8. Allow the rice to sit in the rice cooker for 5-10 minutes to absorb any remaining liquid.
  9. Fluff the rice with a spatula before serving.
  10. Serve hot and enjoy!

You can also add a tablespoon of butter or oil to the inner pot before adding the rice to prevent sticking. If you prefer a spicier dish, you can add additional chili powder or cayenne pepper to the recipe. You can also add jalapeno peppers or hot sauce for an extra kick of heat.
