Ingredients

Simmer the rice for 15-20 minutes, or until it is cooked through and fluffy. 5. In a separate pan, heat the ghee over medium heat. Add the green cardamom pods and stir for 1-2 minutes until fragrant. 6. Add the cooked rice to the pan with the ghee and stir well to combine. 7. Add the soaked saffron and its water to the rice mixture and stir again. 8. Add the sugar to the rice mixture and stir until it is fully dissolved. 9. Add the raisins, sliced almonds, cashews, and pistachios to the rice mixture and stir gently. 10. Cover the pot with a lid and let it simmer for another 5-10 minutes, or until the rice is infused with the flavors of the spices and the nuts are lightly toasted. 11. Remove the pot from heat and stir in the rose water (if using). 12. Serve the yellow rice hot and garnish with additional nuts and raisins, if desired.
