Ingredients

  • 1 tablespoon olive oil

  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 can diced tomatoes
  • 1 pound boneless, skinless chicken thighs

Method

  1. Press the "Saute" button on the Instant Pot and heat the olive oil.
  2. Add the onion, garlic, and red bell pepper and sauté until softened, about 5 minutes.
  3. Add the smoked paprika, cumin, salt, and black pepper and stir to combine.
  4. Add the rice and stir to coat in the spices.
  5. Add the chicken broth and diced tomatoes and stir to combine.
  6. Nestle the chicken thighs into the rice mixture.
  7. Secure the lid on the Instant Pot and make sure the valve is set to "Sealing."
  8. Press the "Manual" button and set the timer for 10 minutes.
  9. Once the timer goes off, let the pressure release naturally for 5 minutes before manually releasing any remaining pressure.
  10. Remove the chicken thighs and shred them with two forks.
  11. Stir the shredded chicken back into the rice mixture and serve.

  • Feel free to use chicken breasts instead of thighs if you prefer.
