For the Spanish Rice:- 1 cup long-grain white rice

- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained

- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 pound ground beef
- 1/2 onion, chopped
- 1/2 green bell pepper, chopped
- 1 clove garlic, minced
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon oregano

- 8 large green bell peppers
- 1 can (8 ounces) tomato sauce
- 1/4 cup water

Method
For the Spanish Rice:
- Rinse the rice in a fine mesh strainer and set aside.
- In a medium pot, heat the olive oil over medium heat.

- Add the rice, diced tomatoes, chicken broth, paprika, salt, and pepper, and stir to combine.
- Bring to a boil, then reduce heat to low and cover the pot with a lid.

For the Gondolas:
- Preheat the oven to 375°F.
- In a large skillet, cook the ground beef over medium heat until browned.

- Meanwhile, cut off the tops of the green bell peppers and remove the seeds and membranes.

- Cover the baking dish with foil and bake for 45-50 minutes, or until the peppers are tender.
